Refined Dinner for 16

I'm planning dinner for a group of very well-travelled gourmands. I was thinking French or Spanish, but wanted something that is relatively easy, make-ahead AND not the typical bouillabaisse, cassoulet, coq au vin, etc. I'd start with country terrine and foie gras, but haven't got any further. Would love your suggestions.
