Red Yeast Rice

Steve | Sep 17, 201601:32 PM     16

I tried to make red yeast rice (a Chinese product) for the first time. I read that it can be made like regular white rice, but it came out tremendously bitter. Also, it softened and turned to mush very quickly, so it seems not at all like white rice in terms of cooking process. I don't mind if it comes out like mush, that's fine with me.

Before I waste any more, I saw another recipe that calls for it to be soaked for 40 minutes in water, drained then cooked like regular rice. Sitill, I don't quite buy the idea that it cooks like white rice. Does anyone have any experience with this?
