Red wine, chestnuts, beans--what can I make?

So it's a cold winter day, and I've got some vegetarian houseguests staying with me. I'd like to make a nice, warming dinner--but of course, pot roast and roast chicken are out....I've got a bunch of chestnuts (the grocery stores here sell them dried, which is a huge time saver--no peeling! Just an hour of simmering in hot water and they reconstitute, like beans), some nice dried Spanish chile peppers and I can probably get some dried or canned beans, too. I'd like to make some kind of spicy, rich stew--maybe with some red wine in it. Imagining something sort of Basque or Catalan, but meatless...Anyone have any recipes or musings? Thanks!
