My friend has been trying to duplicate a sausage recipe that he had some time ago. He described the sausage as pork based made with a wine that made the sausage quite red. It was small size with a link diameter like a bratwaurst and it had to be boiled prior to eating. It may have been smoked prior to boiling as well. Anybody have a recipe or any ideas what it might be called? He thought it was something similar to salami but it wasn't salami obviously. Thanks for the help.
