I've been trying to make red chutney like that found at Indian Restaurants.
I've tried a few different ones. This one was the latest:
The color looked like what I was expecting.
But the problem seems to be that no matter which recipe I try, it tastes too much like fresh tomatoes. (With heat).
Whereas in the chutneys in the restaurants, they don't really taste like a tomato.
I even called a restaurant to ask if they use normal tomatoes in it. They said yes.
The home made sauce just tastes too much like a spiced up fresh tomato.
Every restaurant might makes theirs differently. So if anyone is familiar with the red chutney from a Kaveri Madras restaurant; Pasand's restaurant; or Peacock Restaurant, those are what I'm trying to make.
Here's what my latest attempt looked like. I think the color came out similar to the recipe above. But I think it has to taste less like a tomato.
(The recipe called for 3 tomatoes. I paused it at 2 and tasted it, and it already tasted too much like a fresh tomato. I continued with the 3rd tomato, just to follow the recipe.)

Maybe those places don't make them fresh. I don't know.
