Recs for a wine to use in this stuffing recipe?

I hope that this is the right board to post this question on.

I have been making this stuffing recipe for a few years now: It contains dried apricots, cranberries, and prunes, sauteed pears, onions, and celery, and flavored with cinnamon, sage, and rosemary. It calls for Sauternes wine, which is what I have always used.

I really like the flavors of the stuffing overall, but it's a bit sweeter than I'd like. I think I would like to try using a slightly drier wine, but I am very clueless when it comes to wine. Any ideas for something that would compliment the flavors of the stuffing, while not contributing quite as much sweetness?
