Recreating White Bear's Spicy Wontons in Chili oil at Home? Toppings?

Hmmm.....chili oil, scallions, pickled turnip? pickled mustard greens? What about the powders sprinkled on top? Sumac powder?

I was at HK SUpermarket and wanted to buy ingredients but wasn't sure which.
