For our anniversary I've been wanting to recreate the flavors of our wedding cake in cupcakes.
PRALINE PAVE: Layers of vanilla cake, chocolate truffle and hazelnut cream and cinnamon
FRAMBOISIER: Three layers of dark chocolate cake, chocolate truffle and fresh crushed raspberries and blackberries
The Framboisier I think would work well with a chocolate cake, a ganache icing and maybe filling with a raspberry jam. I've googled and found lots of recipes for chocolate raspberry cupcakes.
But I've been stuck on how to do the Praline one. Last year I did a vanilla cupcake, ganache and tried to fill it with a hazelnut cream, but there was a definite "rum" ish taste that was missing. I tried brushing a hazelnut liquor over the cupcakes, but it didn't seem to jump out.
I'm also not good at filled cupcakes so suggestions on the best way to get all the flavors together would be helpful. Thanks!
