Recommendations in Madrid, Granada, Seville during Holy Week

Hi -- taking a family trip of five people during Semana Santa. Everyone is an adventurous eater, and we have one teenager and one pre-teen. We're looking for recommendations for dishes to try and places to eat for three days in Madrid, three days in Granada and a day trip to Seville (roughly noon to ten pm). I'll scour the boards and do other research, of course, but any info would be welcome. Especially since CH doesn't seem to show dates on old posts, so one never knows what's current. And with the holy week activities going on, recommendations might need to differ... Thanks in advance!
