Recipes for turning slicer-prepped produce?

I was enchanted by the spaghetti-like strands of carrot I recently saw being created on Simply Ming.

When I found an unused Benriner turning slicer on eBay for half the retail price, I pounced. It arrived today so I need to go produce-shopping. Obviously it will be great for making slaws. It appears that it will also do spiral slicing. I don't want to deep-fry. Any ideas for COOKED applications for the products of this gizmo? I wonder if strands will hold up to steaming or baking.
