Recipes for Impromptu Casual Summer Entertaining?

So, thankfully, we are finally approaching that splendid time of year where everyone spills out of their houses and onto their lawns and sidewalks again. I find myself bumping into my neighbors and would love to be able to invite them into the backyard and say, hey come have a drink or an appetizer or whatever, but I'm never prepared.

What are your best "impromptu" dishes for casual entertaining? That you can prepare quickly from ingredients you can easily keep on hand? There's always cheese and crackers or chips and salsa, but anything more interesting or perhaps more substantial spring to mind? We do have a gas grill that we'd be happy to fire up as long as the dish isn't too elaborate (as I wouldn't want to abandon my guests for long), but microwavable or no-cook or other quick-prep is also great.
