I conduct off road tours to remote desert areas. I also do upscale cooking for non-profit fund raisers. Now I have been asked to combine the two. A significant donation gives participants an adventure tour that ends with a very elegant dinner served on top of a mesa or in the sandy swale of a lava flow. Expectations will be high. Fire is out of the question due to the present drought.
I need advice on menus and recipes for elegant fare that can be served at, or below, room temperature. I have access to a ranch kitchen within an hour or two (rough)drive of the serving area.
The number of diners will range from 4 to 16.
