Need a recipe for Thai "brown sauce"

leca | Dec 13, 201510:34 PM     9

When I go out Thai, one of my favorite dishes is the simple dish called various names of KaPow, Kra Prao, Spicy Thai Basil Chicken, etc.... As I understand it, served with a fried egg and minced chicken, this is a staple and even breakfast food in Thailand.

The sauce is not a curry but a spicy brown sauce made from fish sauce, oyster sauce, garlic, sugar, lime, chilis, etc...

Here in the DC area, one chain whose brown sauce I like is Tara Thai but there are a number of other Thai restaurants that do it justice.

For the life of me I cannot replicate this sauce. I have tried numerous online recipes, experimented with them, and now have 6 different bottles of fish sauce all in attempts to get this good taste. What I make usually turns out ok but nothing compared to the restaurant.

One thing that catches my attention is the recipes I find online always feature a hefty amount of fish sauce, sometimes its almost all fish sauce, which makes it smell and taste fishy of course. But the brown sauce I get at Thai places does not have this aroma. I mean you can tell the fish sauce is in there but the balance must perfect because it is not overt, you really have to go looking for it.

Any Thai aficionados who have the brown sauce nailed? Please help, I am addicted to this stuff and want to be able to make it at home.
