Ok, so I'm planning my father's day dinner for my dad. He loves seafood, and dislikes burgers. Go figure, right?
So I'm thinking of making either a smoked salmon crostini or smoked salmon/egg salad crostini.
So, crostini is easy, bake up some oiled bread. But, I'm thinking it's either gonna be a layer of cream cheese, a few capers, and a few pre-soaked red onions, with a fold of smoked salmon on top. Or.... Should I put the capers and salmon in an egg salad and top the crostini with that and a sprig of dill for look. What do you think? (Egg salad would probably be eggs, mayo, capers, chopped salmon, and some dill).
The rest of the menu so far - Crab Cakes w/ a Rosemary Aioli, Country Green beans (Ham and onions), and still working on my starch.
