"The Best Recipe" Chicken stock recipe

I used to be in possession of this cookbook but no longer am, and I'm wondering if anyone can give me the basics on their excellent chicken stock recipe (paraphrasing so as not to violate copyrights). I know that I chop the chicken into 2 inch pieces, saute, remove, saute an onion, remove, combine with water and let simmer. I don't remember: 1) if there are any ingredients besides chicken and onion, 2) how much water to put in, or 3) how long to simmer. If anyone could help out with this I would be incredibly grateful.
