I'm planning to make cornbread to go with some cajun food I'm making this weekend, but I've never made cornbread before. I don't want to make the namby-pamby yankee stuff - I want the real deal. So i turn it over to you guys.
Also - I know it's traditional to make it in a cast-iron pan, but I don't have one. Should I invest in one? Also also - would making them in muffin form be utterly sacriligeous?
