So my dad lives in a village in Périgord (Brantôme to be specific). I visit him there almost every summer. Usually I bring back (to San Francisco, where I live) some foie gras, maybe some aperitifs, etc.
This year I finally brought back some black truffles. A local butcher/grocer in the town carries truffles in various forms. I found a couple in a sealed glass jar with some liquid floating around in it. I didn't ask how they were prepared, but I thought that was as fresh as I was going to get in the summer.
After some months, I finally opened the jar to try the truffles out in some eggs I was preparing.
I was very surprised - almost no smell, almost no taste at all.
I found an old thread here where someone asked a similar question; many of the posts were asking about the species of the truffles; since I got these right in the Périgord at a relatively reputable store, I assumed they are the real deal.
But the lack of flavor was astonishing.
In that other thread, some folks said that truffles in a jar like that are usually cooked, and lose most of their flavor that way.
Has anyone had experience with buying truffles in Périgord? If I can't be there in fall or winter to get the fresh ones, what's the next best thing?
