Raw Goat Milk Ideas

We recently found ourselves in the wonderful position of milking our own Nigerian goats - What an experience! The milk is sweet and incredibly rich - reminiscent of cream or at least half and half. I already considered feta and chevre. Just tonight I thought of using it to make paneer. Since we are new to having access to fresh, raw goat milk, we'd appreciate any ideas. Many thanks!
