Rapid rise yeast and bread flour

OK, I am a pretty decent cook, a good cake/muffin/brownie/cookie baker, but bread isn't something I have a lot of experience with. In cleaning out my lazy susan yesterday, I found a 3 package trio of dry Fleischman's Rapid Rise yeast and a 5 lb. bag of King Arthur bread flour. Looking for some inspirational recipes that I can use my Kitchen Aid mixer w/ dough hook. Could be coffee cake, could be bread, could be cinnamon or caramel rolls, key is SIMPLE. The yeast package said it doesn't expire until May 2009, so I think it should be OK. Worst case, I can try blooming it, if it doesn't work, I won't proceed. Any suggestions fellow 'Hounds? Thanks!
