Ramen, Tokyo style

Well you chowhounds want an excellent version of Tokyo style ramen it can be had at Tomoe, in of all places, San Rafael. What a treat I've had ramen at vaious shops Dohennkotsu, Santa they were excellent but not Tokyo style and this is as excellent a ramen to be eaten. The Broth; good pork flavor with a dash of white pepper in the finnish didn't use the pepper on the table. Not salty, good balance of soy and stock flavor, bright. Noodles; Good not too soft I prefer firmer will request this next time. Traditionally garnished with roast pork, wafer of seaweed, boiled egg, green onions and The bamboo shoots a touch of sake in flavor. meaning attenion to detail.
Also homemade gyoza wrapper! large gyoza, good meaty garlicy flavor, excellent texture with tender wrapper. Ramen only at lunch, only lonely kind of choice on lunch menu.
