I went to the Flushing Court for the first time this week, and was really blown away by the hand-made noodles at the Ramen King stand. Many of the recipes are called "northwest style", but I'm wondering are these actually Uighur dishes? Three years ago a friend came back from China raving about Uighur food in Xinjiang, explaining that Uighurs lived mainly in NW China but were an ethnic minority rather than Han Chinese. He described in detail watching them make hand-pulled noodles, exactly like the Ramen King lady does, and being served noodles in a tomato based meat sauce, with plenty of heavily spiced, fatty lamb kebabs. We thought that the closet we would ever find was the Uzbekistani Tandoori House, but I'm wondering if Ramen King is the real deal. (I can't ask my friend, he moved to China.) Does anybody know?
