Ramen Aside...

I am happy to acknowledge that Manhattan has an incredible array of options if one wishes to enjoy traditional Ramen or other delicious noodle soup options.

However, I am hoping that Chowd-Nation can help me with an alternate request. I'm looking for the kind of "Noodle House" where one can choose from a variety of Noodle options (udon, soba, ramen, lo mein, etc) as well as genres (broth based, stir fry, etc) prepared in the style of different national cooking styles (Chinese, Thai, Japanese, etc).

Such a place must exist, right? I'm willing to admit that such a place (the dreaded "Pan-Asian", or *gasp* "Asian Fusion" restaurant) would likely sacrifice some of the authenticity of each individual proud culinary tradition. However, it's a risk I'm willing to take.

Any suggestions?
