Raku-Outside of the strip and well worth it. You have to order the kaiseki ahead of time for a minimum of two people. The regular menu is very large and really good. If you order the kaiseki, they get even more special stuff for you.

Sen of Japan-Lots of discussion of the best sushi in LV. This place is really good. Many have posted that the predecessor to Yellowtail, Shintaro?? was the best, well the chef Shiji is at Sen of Japan. I have a very high standard for sushi and he did a really good job. NOTE: It is pretty far outside the strip.

Bartolotta- Really good. What else to say. The highlight was the Gamberi Rosso. Even better than the langoustine.
