Hi everyone- bought a few racks of lamb this weekend, but did not cook them yet. We have a big brunch on Easter, and we really did not want a big meal later in the day.
But- I will be cooking it soon. Rack of lamb is one of my favorites- I usually use S/P, and garlic/rosemary or mustard for seasonings. A friend of mine suggested a different method, and I am looking for opinions.
He said to cut between the bones, not quite severing into chops. Season as you like, and broil until almost done. Then melt some butter and brown sugar, and spread on the rack. Put back under the broiler until brown and crusty. Has anyone tried this? Dont' want to ruin a good piece of meat, and I usually like savory, not sweet. He said it was not really that sweet. Please help!
