I just got back from Albuquerque with waaaay too little hatch chilies. Drat. While there, I fell in love with the food. I also recent visited Denver and loved the food there. Heck even reaching back almost a decade when visiting friends in Phoenix, I love the food there.
Thing is, what cookbook captures these state's recipes best?
I have Simply Simpatico, Colorado Cache, and Colorado Classique and they have a few good recipes, but what do you consider the textbook for this cuisine?
