I recently asked for some recommendations for my upcoming trip to NYC. For Andean someone recommended Rinconcito Peruano on 9th Ave. Does anyone else know of anyone doing interesting things with quinoa? In Ecuador I've had some great creamy potato-based soups thick with this hearty grain, but by far my greatest discovery has been small pancakes made with mashed potato and quinoa. Here in Georgia no ones's ever heard of it, much less cooked it.
