Quince Paste/Membrillo

I love slices of quince paste with Manchego cheese and fruit as the end to a tapas meal at a favorite Spanish restaurant in the Boston area, but I was wondering how else it could be used.

I picked up a small tub of Corazon del Sol quince paste at The Spanish Table while in Seattle a few months ago, and have found one recipe online that uses membrillo and prosciutto in a baked chicken recipe (which I might try tomorrow).

Any other ideas?
