So, I learned my lesson not too long ago and with a different fish taco recipe I let it sit in the marinade way too long - still tasty but the integrity of the fish was compromised.
This time - this recipe calls for marinating no longer than 3 hours. But then I am dredging in flour before cooking. This is for tomorrow.
Question is - can I marinate and then dredge in flour - and lay out on cookie sheet in fridge till frying tomorrow?
