quick/cheap dinners

Hi everyone,
I've just recently graduated from college and am living on my own in NYC. As a writer, I can't really afford to eat what I'd really like for dinner. Plus, I'm now working 3 jobs, so my time to cook is limited at best... I am a decent cook, though, and I enjoy cooking. Any ideas for quick/cheap dinners for one or two people, esp. ones that I can make with materials which don't perish quickly? I do a mean carbonara, and I've found a couple other variations for pasta - making my own meat sauce, throwing some good Italian sausage in a prepared tomato sauce, I do variations of eggs with some vegetables or fruit to go alongside, and I've done a marinated london broil in my cast-iron pan, which lasted for a while and gave me some good things to do with leftovers, but I'd like to branch out a bit. I'm not a huge fan of chicken - so boring, but I'll eat pretty much anything from any cuisine. Any ideas? Thanks.
