Quick cakes that don't require preplanning

I wanted to make a quick dessert last night while dinner was bubbling away, and I decided to go for the blackberry almond cake from Fika which I love making as a last-minute dessert due to the minimal amount of ingredients, needing melted butter vs softened, and bakes in 20 minutes.

Do you guys know of any quick desserts that fit that criteria (or at least two out of three)? I'm sure there's at least a Nigella cake or two that does.

The other one I can think of is Bill Granger's coconut bread which I make as muffins to cut down on the baking time:
