I've found a few recipes online and I keep seeming to end with with something a whole lot more like a frittata than quiche. I'm looking to make a quiche with a texture that I can most closely describe as that of firm custard. I've had this texture several times from a few local bakeries but I can't replicate it and it's this texture that I'm after. I can't find the last recipe I used but I know it involved eggs, heavy cream and I think butter, but I ended up with a frittata, it tasted more like a thick omelet than a quiche! Any help or recipes would be much appreciated.
