Questions about Trattoria Cadorna and Costanza in Rome

My husband and I have arrive in Rome on a Monday morning and leave on a Tuesday morning in June. We will be staying in the Colosseum area. I've read through the boards and Elizabeth's app, and Trattoria Cadorna seems to meet our requirements, though it is a bit far from our hotel. I'm also considering Constanza.

I was hoping some of you kind people could help me with a few questions regarding the logistics. I apologize for the long post.

1. First, am I barking up the right tree with Trattoria Cadorna? We are essentially looking for a place serving exceptional, simple, comforting food. My husband is a picky eater. Before I met him, he had never tasted broccoli. I have broadened his horizons considerably, but there are still a lot of things he doesn't eat: seafood, pork, game, sausage, mushrooms. However, he loves lasagna and mozzarella and red-sauce pasta (and meatloaf, which I've seen on a few Roman menus).

I on the other hand will try anything and have been known to close my eyes in food-induced rapture.

So, I thought Trattoria Cadorna would be a nice option, given the variety of food on the antipasto platter. Between the veal meatballs, cheese, and fried dough, he definitely won't go hungry.

Costanza is my backup because it seemed to have a nice variety of secundi dishes and an amazing interior. We're ending a long European vacation with this dinner so I'd like it to be memorable in at least some way. Any other suggestions are welcome. If there's a place open on a Monday with great lasagna, that'd be amazing.

2. Do I have to make reservations for a Monday night? Any recommended time to not seem like a total tourist? 8:30? (Maybe it doesn't matter because I'm not fooling anyone anyway, right?)

3. Can we get by speaking English or should I make sure to have a good handle on asking any food-related questions in Italian? Reviews suggested Constanza waiters are not good with English.

4. I'm a little unclear on the various service charges. There'll be a bread/water cover charge, then a 10% service charge as well? And that takes the place of a tip?
