Questions about ordering wine in Paris

I drink wine but hubby does not. (I just got him to try Beaujolais Nouveau and he's learning to like that. But I suspect that's as far as it will go.) And I usually only have 1 glass per meal. (I get tipsy too easily!) Ordering an entire bottle will be a wasted expense on us. It seems that many restaurants in Paris want you to order a different wine with each course? We can't possibly do that. At least we'll be saving money.

Will we be able to just order one glass with our meal and not be treated badly? I'm sure there must be some people who go to Paris who don't drink and somehow enjoy themselves. Will we be pressured by sommaliers to order wine when we don't want to? I will probably always want one glass of whatever they suggest, but that will be about it. Perhaps a glass of champagne for both of us on our anniversary.

Having not been before, I have no idea how all of this "works" so please bring on the advice on the best way to handle this.
