Had some swordfish tonite that tasted tangy or a bit pickle=ish. Hubby said kind of a little reminiscent of pickled herring. The fish was offere4d lemon pepper or Cajun but we got it unseasoned. Wes figured it must have been marinated so he ate it. But then I heard someone else return it for being rubbery so I asked and waiter said it was fresh delivered today and not marinated. So that worried me but all they could come up with was that maybe some of the lemon seasoning got on our piece as it was grilled with some other seasoned pieces. Mgr tried some and thought it was good and they said people had liked it all day. So... my question is, can swordfish or any fish get a tangy taste on its own, does it mean something bad, or do some purveyors marinate or treat swordfish in some sort of acid to keep it lasting longer? I know I have heard that haddock etc has that done to reduce the ammonia taste of bacteria... In my experience, when fish goes bad, it gets really stinky, not tangy so I am puzzled.. thanks!
