I'd like to get some tamales for Xmas morning and would like some advice. While I am happy that there is now a decent selection of places to buy tamalaes, I'm sometimes disappointed by the way the masa is prepared/cooked - for my taste, it is often too moist, as if the tamales are not steamed long enough. I'm wondering if this is a certain regional style of tamale as opposed to a badly prepared one?
Given this, can someone please recommend a place that prepares tamales so that the masa is drier (not dry, but resembling as closely as possible the kinds of tamales you find in L.A.). Anywhere in Brooklyn would be great - thanks!
