Question re: proper lid size for a sauté pan

jljohn | Apr 23, 2012 04:01 PM

I have a sauté pan with an outside diameter of 10 3/8, and I am looking for a lid. If I want and old style pancake lid (perfectly flat with a long iron handle), how large should the lid be? Do I need any overhang? If so, how much? I have a bead on an antique lid with a diameter of 27cm (10 5/8"). This would leave the lid overhanging the outer edge of the pan by 1/8" all around. Is this ideal or not enough? Thanks! Jeremy
