Question about lacto-fermentation

A friend and I tend to send each other food-related bet-you-don't-have-one-of-these gifts for Christmas and birthdays. I was thinking about sending her a Pickl-it setup, since she's a gardening maniac (especially for an Alaskan). My concern is that she's also a recovering alcoholic, and I'm not entirely sure of the processes involved in fermentation pickling and therefore don't want to send her something that could trash years of successful recovery. Anybody able to tell me of the products and byproducts of lacto-fermentation?
