Question of kashrut and liver

Based on my experience with chopped (chicken) liver - I guess I had never thought to much about the liver of an (otherwise) kosher animal being kosher or not. However on a recent Top Chef Last Chance kitchen, there was an episode where the liver options were goat, beef, and pork. Excluding the pork liver - is there a reason that either goat or beef liver wouldn't be kosher (presuming all other butchery to be kosher)? Or was the explanation given in the episode just confusing?
