A question for Ike Re: tamales

Can you give those of us, who have never tried one of these puppies, an idea of what the consistancy is like and some idea about the flavorings, etc.

I'm just guessing that the consistancy might be like a meat loaf. Are they made by placing a mixture of pork and seasonings within a corn husk? Wrapping them up at both ends and steaming them? Is sthere a sauce? That's what I remembered viewing a FoodTV spot on Doe's several years ago.

How about telling us something about Doe's too. I'd appreciate it, if you have the time.
