Question on favorite melting cheese

I made a dish last night that had a combination of freshly grated parmesan and cubed smoked mozzarella. IMHO, it was balanced, but in want more cheese flavor to taste.
What type of cheese would give me more flavor than the smoked mozzarella, or perhaps I should increase the quantities?
