Question about doubling (or more) with yeast

sarahjay | Feb 20, 2012 02:27 PM

I know that when you double a bread recipe you don't usually double the yeast, but I need to multiply a recipe by 20, and was wondering if anyone knew about yeast in a recipe that large. I usually bake large amounts of cake (at work) but we don't do bread and I have no professional bread baking experience. Should I multiply the yeast by less than 20? Or do all the yeast?
