I love, love, love Corned Beef. BUT, at $5.99 per pound (and it didn't really go on sale in March), it is out of my budget. I have a Cooks Illustrated recipe (somewhere--we just moved) for home-made Corned Beef... but brisket is ALSO $5.99 per pound. Is it possible to make this with a roast that goes on sale for $2.99 per pound or pork roast that is $1.99 per pound? Has anyone tried this? (I have an extremely tight budget).
