Queso Fresco

I have a pound of it. Seems to be one piece, not crumbled. I have always seen it used as garnish, a sprinkle on top of refried beans, plantains, etc. At that rate I'll never use it up. Can it be used for quesadillas? In enchiladas? Or, is too dry, won't melt properly? Any ideas on how to cook with this?
