this raw ewe's milk cheese tastes like it has been soaked in some type of alcohol. there is also has a bit of "stinky" flavor in the cheese which may off-put some. the cheese is quite good overall, creamy and slighly sharp.
i've been trying to find some info about this cheese, but more of the websites are in portuguese which i can't read, there was one page in french which gave some info about the milk being curdled with thistle. does anyone here know more about queijo serpa?
