I can't put my finger on a flavor at Galatoire's

I've had the oysters en brochette many times. However, yesterday was the first time that I noticed that it sits in a small layer of what seems like melted butter in the bottom of the plate. However, the butter has a wonderful and curious flavor. What can't I pinpoint?
