Pupusas in Santa Rosa by Evelyn Carolina Linares

My favorite bite at last month's 5 de Mayo fair in Santa Rosa was Salvadorean pupusas. And everyone else's too, as I stood in line for more than 30 minutes to get my order. When I finally got my food, I didn't mind the wait.

Delicate crisp edge to the exterior and tenderly chewy, almost creamy texture to these plump rice/corncakes with revueltas --- wonderful flavors and very good curtido too. This vendor doesn't have a restaurant but does catering.
