PUPUSAS - Home Cooking Dish of the Month, April 2019

Welcome to the April 2019 Dish of the Month reporting thread! For the entire month of April we will be making pupusas – no foolin’!

Says Alex Delany of ‘Bon Appétit’:

“Any vehicle that delivers beans and melty cheese is a good vehicle. When said vehicle happens to be a pupusa, that's even better. You may have had them at your favorite Salvadoran spot, but it's time to make pupusas at home, a task that's easier than you thought.

According to senior food editor Rick Martinez, this recipe uses an extremely forgiving dough, stuffed with a mixture of cheese and refried beans. The pupusa is served with condiments, including a curtido (fermented cabbage slaw) that gets better with each day it sits out. The recipe is also adaptable—Martinez says you can add pork, chicken, or chorizo to the filling, as long as it's chopped to a smooth enough texture. So get your beans, cheese, and dough ready.
