Went to make this the other day:
Was in a rush--had just gotten home, was getting a meal ready, and baking a second item, and I wasn't paying as much attention as I ought to have.
After the step of lowering the oven temp from 425 to 350--yes, very much committed--it suddenly struck me that I'd forgotten to add the evaporated milk. Ah, so THAT'S why it didn't fill that deep-dish crust! I'd idly noted the fact without thinking about it.
So, after a bit of cursing and headbanging, I left it in the oven until it looked more-or-less set, and took it out to cool.
And it was pretty darn good. Much more intense pumpkin and spice flavor, though I'd omitted the "baking spice" for not having it around (subbing a little extra cinnamon, nutmeg, and some vanilla).
