pumpkin cookies with penuche frosting

I mentioned these in another post and recipe was requested. they are yummy. i have only ever made them with canned pumpkin (or squash) and marg or shortening for fat. i'd like to try experimenting with a mix of oil and butter (for flavor) or some applesauce to replace some fat, but have not gone there yet....

Frosted Pumpkin Cookies
1 c. shortening
1 c. sugar
1 c. canned pumpkin
2 c. flour
1 t. soda
1 t. b. powder
1 t. cinnamon
1/2 t. salt
1/2 c. chopped toasted nuts
1/2 c. raisins

cream shortening and sugar, add pumpkin. add dry ingreds, stir in nuts and raisins. drop by rounded teaspoon onto greased sheets. bake 10-12 mins. at 350
when cool, frost...

penuche frosting
3 T butter or marg
1/4 c. milk or cream
1/2 c. brown sugar

boil slowly for two minutes, cool slightly and then
stir in 1 1/2 c. sifted confectioners sugar and 3/4 t. vanilla.

drizzle frosting on top of cookies and sprinkle with more chopped toasted nuts ( i use pecans) before frosting sets.
