I was asked to post this:
Onion, 1 biggin'
A few stalks of celery
A coupla carrots
A few cloves of garlic (3)
Coarsley chop and saute above ingredients in grease of your choice.
A coupla quarts chicken stock
A few handfuls of fresh roasted, peeled green chile, 4 cups (Hatch preferred over Aneheims
A mess o' peeled and cored pumpkin chunks.
Either cook in pressure cooker or in pot until soft.
Puree w/ hand blender and add Mexican crema, sour cream or heavy cream and blend until smooth.
Don't forget the salt & peppah
Serve w/ half an avocado half floating like a leetle barco on top.
Pumpkin, red chile and pork burrito
Cut up 2 lbs cheap fatty pork into 1' chunks, toss in good pot and fry in oil
Add 1 cup hatch red chile powder and 3 cloves diced garlic (God loves the holy trinity)
When browned add 3-4 cups pumpkin or squash diced in 1'- 2" inch chunks
Barely cover w/ stock
Cook uncovered over high heat until water evaporates 45 + min.
Mash together w/ spud masher
Heat up some flour tortillas on your comal
Stuff tortillas w/ chile,pork & pumpkin misture, fold and roll
Top w/ green chile or red chile sauce, if you wish
Serve w/ a side of refried frijoles
Wash it all down w/ some Modelo
